While my blogs always relate to real estate in either tangible and/or intangible ways, this post does not have absolutley anything to do with real estate. No, this blog is about a recipe I created that went over well with my greatest critic– my daughter Elizabeth. She is a great food critic because she has a great palatte and is an inventive chef herself.
This experiment turned out great, only requires 5 ingredients, one pot and is a healthy alternative to many other breakfast recipes.
- 2 Eggs
- 2 flour tortillas
- shredded cheddar
- hot sauce
- 1/2 ripened avacado – scooped out and lightly mashed
1. Heat 6-8 inch skillet and swirl some butter in it to prevent sticking (if using a non-stick pan skip this step).
2. Crack eggs directly into pot, sprinkle with S&P to taste, and using a wooden spoon scramble. Remove just before eggs are fully cooked and place on a plate.
3, Place one tortilla in pan, sprinkle generously with cheddar, place scrambled eggs on top, spread softened avocado on top of eggs and several dashes of hot sauce. Place second tortilla on top.
4. Gently flip the sandwich and cook just long enough for the top tortilla to heat and shredded cheese to melt (about 1 minute). Remove to plate and get ready to enjoy this satisfying savory treat.
